Homemade Yogurt Recipe:
Making yogurt at home is very simple. By following the below steps you can make about 2 quarts of yogurt.
Things you need…
Ingredients:
- Organic, whole milk
- 1 yogurt starter kit
- wooden spoon
- Instant-read or candy thermometer (one that can clip to the side of the pan)
- Whisk
Equipment
- heavy saucepan with a lid
- 1 wooden spoon
- Instant-read or candy thermometer (one that can clip to the side of the pan)
- Sterilized glass jars
Method:
- Heating the Milk: Pour the milk into a saucepan and warm it until it reaches right below boiling point (about 185°F). Stir the milk gently while heating to make sure the bottom doesn’t scorch and milk doesn’t boil over.
- Cool the Milk: Let the mixture cool down until it is warm enough to touch (about 110°F). Stir it occasionally to prevent the skin from forming. These temperatures are important so it is better to use a thermometer. Although if the milk is down or up by few degrees it should not matter.
- Thin the yogurt with Milk: Take a yogurt starter kit, add cultures into the milk. The quantity of the cultures will be provided on the pack). Whisk the milk until yogurt is dissolved in the milk.
- Pour The Milk: Take sterilized jars. Pour the milk and yogurt mixture into it making sure to leave some space on the bottom. Close the lids and place in a warm place away from direct sunlight somewhere the temperature is around 100 degrees Fahrenheit (or 38 degrees Celsius), perhaps next to radiator or boiler.
- Wait for the yogurt to set: Leave the jars for 4 hours to overnight for the yogurt to set. The time for yogurt to set depends on the cultures used, temperature of the milk and your yogurt preferences. The longer it sits the thicker and more tart it becomes. If this is the first time, you are trying then check after 4 hours and stop when it reaches the taste and consistency you need.Note: Avoid jostling or stirring until the yogurt is set.
- Making the next batch: Once you made one batch of yogurt, you can use some of it to make next batch. After few batches, if you observe some odd flavors or if it’s not culturing quite quickly, then it means some outside bacteria has taken up the residence. As long as the yogurt is good to taste, you are safe to use it. To make a fresh, you can use a store brought commercial yogurt in your next batch.
